SPICED CARROT CAKE
a cinnamon cake with lots of carrot!!
.1 Mix in a smaller bowl 4dl of plain flour, 1tsp of baking soda, 1tsp of fine salt and 1½tsp of ground cinnamon.
.2 Mix in a bigger
bowl 2dl of vegetable oil, 2dl of white sugar, 2dl of brown sugar and 1tsp of vanilla
sugar. Add 4 eggs to this bowl.
.3 Bit by bit combine the dry ingredients into the liquid ones.
.4 Fold in 6dl of grated carrots and if wanted 2dl of nuts (walnuts preferably).
FOR THE BUTTERCREAM
.1 Mix with an electrical mixer about 90g of soft vegetable margarine, 3dl of powdered sugar and 2tsp of cinnamon / gingerbread spice mix.
OVEN 180°C FOR ABOUT 35MIN

.2 Add 2tbsp of cold
milk and continue to mix till soft. Add more milk if you think it's too stiff.
