BUTTERNUT SQUASH AND APPLE mini sweet breads
.1 In a pan cut in small pieces 50g of butternut squash and 50g of not too sweet apple.
.2 Add 5tbsp of water, 1tbsp of demerara sugar and ½
of a small cinnamon stick. Cook it with lid on till enough soft to mush it
with a fork.
.3 In a bowl mix 80g of soft vegetable margarine and 2½dl of demerara sugar. Add 1 egg and mix. Add the mushed pumpkin and apple, 3½dl of plain flour and a pinch of ground cinnamon.
.4 Make dollops of dough directly to a baking tray covered with parchment paper.
