COCOA MUFFINS with chocolate topping and more
.1 In a bowl mix 2 eggs and 3dl
of demerara sugar. Add 1½dl of milk to that mixture.
.2 In another bowl mix 4½dl of plain flour, 2tsp of baking powder, 2tsp of vanilla sugar and 4tbsp of cocoa powder.
.3 Combine both. To that add 150g of melted vegetable margarine.
.4 For the chocolate topping melt in the microwave (in a defrost mode, bit by bit till it melts) 100g of culinary chocolate (min 50% cocoa). Add 1tbsp of vegetable cream and mix well. Use it as soon as possible.
For the extra toppings after the
chocolate glaze, you can sprinkle shredded coconut, poppy seeds, sugar
decorations, caramel chunks, mint chocolate dragees and more...
