COCONUT MUFFINS
a moist muffin full of coconut
.1 Start by cracking 2eggs to a bowl with 1½dl of white
sugar. Mix till well combined.
.2 In another bowl (one that can go to the microwave) put about
75g of vegetable margarine to melt in the microwave.
.3 To the margarine bowl add 2dl of shredded coconut and mix
till the coconut looks moist.
.4 Add ½dl of plain flour.
.5 Pour into the eggs and sugar bowl.
OVEN 180°C FOR ABOUT 15MIN
(after 10min check so that they don’t dry, take them when the center
still looks moist)
