LEMON CAKE with LEMON SYRUP and honey drizzle

LEMON CAKE DRIZZLE HONEY

THE CAKE
.1 Start by mixing 2eggs, 1dl of white sugar and the zest of 1 lemon (you’ll also use the same lemon for the syrup).

.2 Add 100g of melted vegetable margarine.

.3 To that mix add 3dl of plain flour and 1tsp of baking powder.

It’s a spreadable batter so it will look quite thick.
 OVEN 180°C FOR ABOUT 20-25MIN
(Bake it in a square baking tin if you want to shape into little cakes.)

THE SYRUP
.1 In a saucepan add 1½ dl of water, ½dl of white sugar and the fresh juice of 1 lemon (about ½dl).

.2 Let it boil for about 5min and simmer for 5min more. Put it aside. 

.When you have the cakes you can slowly dip them (by the bottom and till half) into the syrup. 
.Let them rest upside down so that the syrup can be absorbed. 
.When you’re about to serve drizzle honey over each one if desired.
