LINGONBERRY JAM COOKIES
SWEET AND SOUR IN ONE BITE
THE BISCUITS
.1 Mix about 70g of soft vegetable margarine and ½dl of white sugar till it's soft.
.2 Add 1 egg and combine well.

.3 Add 2dl of plain flour, ½tsp of baking powder and ½tsp
of powdered cardamom or gingerbread
spice mix. Add flour only till you're able to mold it but keep it as soft as possible.
THE JAM
.1 In a saucepan add 2dl of frozen lingonberries, ½tbsp of white sugar, ½tbsp of brown sugar and ½tbsp of jam sugar (with pectin in it).
.2 Cook it till soft. Help it become a paste by popping the berries with a fork. Let it cool down for awhile.

Mold little biscuits and with the back of a small spoon press in the middle. Add dollops of jam.
OVEN 180°C FOR ABOUT 10-15MIN
