ZUCCHINI AND OLIVE OIL CHOCOLATE CAKE


ZUCCHINI OLIVEOIL CHOCOLATE CAKE

.1 Combine in one bowl 3dl plain flour, ½dl cocoa powder and a pinch of salt. 

.2 In another bowl combine 1 ½dl of olive oil, 500ml of thinly grated zucchini (peeled if you don’t want a strong flavour), 3dl of demerara sugar and 3 eggs. 

.3 Fold everything together, the dry ingredients into the liquids. 
OVEN 180°C FOR ABOUT 30-35 MIN 

FOR THE CHOCOLATE GLAZE
Melt in the microwave  about 60g of chocolate and 1tbsp of vegetable cream or other at your taste.
