OAT CAKE with CARDAMOM-SUGAR GLAZE and 3 CURRANTS ICE CREAM
.1 Start with 2eggs, 1dl of white sugar and 1dl of demerara sugar in one bowl. Mix well.
.2 Add 1dl of milk to the previous.
.3 In another bowl mix 1½dl of plain flour, 2dl of oat flour, 1½tsp of baking powder and 1dl of rolled oats.
.4 Pour the dry ingredients into the moist ones.
.5 In the end (and just before going to the oven) fold in 100g of melted vegetable margarine to the mix.
OVEN 200°C FOR ABOUT 15-20MIN
THE CARDAMOM-SUGAR GLAZE
.1 Mix 2dl of icing sugar, 2tbsp of milk and a pinch of powdered cardamom.
.2 Brush this mix through the top of the cake right when it comes out of the oven. Don't over do it (you can even put the rest of the glaze in a milk jug and have it on the table when serving the cake).
THE 3 CURRANTS ICE CREAM
.1 In the electric food chopper (or a food processor, a blender...) add 2dl of 3 currants frozen mix, 2tbsp of light syrup (keep adding to your own taste),½dl of plain yogurt and ½dl of milk. Combine everything till you have a creamy mixture.
